The virtues of a diligent and hardworking woman have been praised throughout the ages from the beginning of time. The popular saying goes that a diligent woman makes a home of any house or dwelling. Naturally, she is also able to serve a glorious meal from just about “nothing” on the table. Fortunate indeed are those children and sweet-toothed people whose mothers/wives are always planning ahead for important events on the calendar. This would mean that “now” is more or less the time to start planning or baking your family’s Christmas season cookies and eats – that is the time of the year when the adults want to relax while the kids snack away on those wonderful treats mother has stashed away in the cookie jar(s).
This week Rustenburg Herald’s “What’s Cooking?” team joins Marita Terblanche in her Wrap, Rattle and Roll kitchen with her showing us how to bake really wonderful Christmas cookies or party snacks for in-between meals during the long and enjoyable December school holidays.

You will need the following:
1 kg baking butter;
5 ml baking powder;
5 ml Vanilla Essence;
3 eggs;
500 ml icing sugar;
8 x 250 ml cake wheat flower;

 

Mixing instructions:
Mix butter and icing sugar until smooth. Add eggs, Vanilla and baking powder. Add the flower cup-by-cup until 8 cups are mixed in. Make sure you flower dust your workstation and start preparing the baking process once you’ve rolled out your dough and is done with the forming/cutting of your individual cookies. Bake your cookies at 150°C until light brown.
Royal Icing recipe

Marita’s cookies are famous for not being wonderfully tasty only, but for the delightful icing and attention to detail of each individual cookie. Marita prepares her Royal Icing as follows:

Ingredients:
12 egg whites;
2.5 kg icing;
4 ml cream of tartare;

Method:
Separate the egg whites from the yolks – keep separate. Add 4 ml tartare powder to your egg whites. Start adding the icing no more than 250 ml at a time until all the icing is thoroughly mixed. Your mixture should now have a stiff, white consistency which you will use to decorate your cookies! Go on - let your imagination take over. Did you know that Marita bakes to order?
