In the hustle and bustle of city life, getting the kids to school on time, preparing meals at least twice a day and meeting your own daily obligations at work all contribute to leaving people with no choice but to cut corners in getting everything done on time.
If you are one of these, especially if you are a single mom, Melissa-Sue Harmse – owner and chef of Like & Share – an eatery and snacks outlet in Kock Street, Rustenburg, demonstrates how to prepare her favourite “Overnight Superfood oats & chia bowl – something that will see your kids and family through the day without running out of steam. Melissa-Sue does it like this:

Overnight Superfood oats & chia bowl

Ingredients:
(makes 4 portions)
1 tin of coconut cream
250 g of rolled raw oats
5 ml Apple Omega superfood powder
50 g of chia seeds
150 ml of full cream plain yogurt
Seasonal fruit chopped into pieces
5 ml pure honey

Method:
Combine the coconut cream, raw rolled oats, superfood powder and chia seeds. Refrigerate overnight. Start by first layering the oats in the bottom of a bowl. Next, add the plain yogurt on top of the oats. Add the chopped fresh fruit and drizzle with the honey. Decorate with fresh mint leaves. Refrigerate overnight or serve fresh as a healthy tasty breakfast before school.
Of course it can also be served as a pudding or mid-morning snack before kick-off of the Boks’ next game against the Pumas at Twickenham this Saturday.

In next week’s edition of “What’s Cooking” (in Rustenburg Herald and North West Newspapers’ AgriPulse) Melissa-Sue will be demonstrating a dish with considerably more around the belly which is sure to float your boat.
