Choc ganache cupcakes

• Place 4 eggs and 3⁄4 cup castor sugar in a bowl and beat till white.
• Add 1⁄4 cup oil and beat again.
• In a separate bowl mix 1⁄4 cup cocoa with 1⁄2 cup boiling water.
• Sift 1 cup cake flour and 2 teaspoon baking powder together.
• Fold into egg mixture and add a pinch of salt.
• Then fold in cocoa mixture. Add a teaspoon vanilla essence and mix in.
• Pour into a greased tray of your choice. Bake at 180 ° C for 15/20min.
• For the topping, melt chocolate of your choice in a double boiler.
• Once melted, add in fresh cream until you reach a smooth caramel consistently.
Butter cream
• 250 gram butter
• 2 cups Icing sugar
• Vanilla essence
• And 1 tablespoon Cocoa powder.
• Pipe little rosettes around your cake and place the chocolate ganache in the middle.
