With spring just around the corner and the kids most probably going to enjoy a far greater share of the outdoors and out of your hair young mothers know how to keep the kids entertained, well-fed and full of energy without having to spend a lot of time in the kitchen. In this week’s cook, we feature the first group of four finalists in the Ms Rustenburg pageant 2018 and yes, we were treated like royalty. In this edition thus – two lovely, easy-to-make treats – peanut butter cookies and a delightful strawberry tart.

Peanut Butter Cookies

1 x cup sugar
1 x cup Peanut Butter
1 x egg

Mix all three ingredients together until it makes a soft dough. Simply roll into small/average “balls” and flatten these in a pan – press down with your hands, a glass or anything similar or handy. Bake for roughly 10 minutes. Leave in the pan for a few minutes to cool down and enjoy!

Strawberry Tart

Ingredients:

1 pack of Tennis biscuits
1 pack Strawberry jelly
125 ml boiling water
175 ml plain Strawberry yogurt
1 can condensed milk
1 can drained Strawberries
125 ml Strawberry syrup

Method

Place all the biscuits in a plate. Prepare the Strawberry jelly as indicated on the box and allow to cool. Mix 125 ml boiling water with the 125 ml Strawberry syrup. Mix the yogurt, the condensed milk and ¾ cup of the jelly together. Place in freezer to set. Cut Strawberries in half and spread equally across the tart. Now slowly pour the rest of the jelly over the tart, allow to set and enjoy…
