Well well, it’s that time of the year and recipes for Christmas dinner or treats in the form of cakes, puddings or starters are on everyone’s lips. For those people who regularly enjoy fish but who didn’t budget for something as extravagant as crayfish, we have a recipe for a wonderful mock crayfish starter which is easy on the wallet and easy to make. Ingredients:

1 onion;
1.5 kg white skinned fish or fresh salmon
A few drops of Tobasco sauce
Salt & pepper to taste
120 ml Mayonnaise
1 lettuce head
75 ml tomato sauce

Method:

Cook the fish with an onion and salt and pepper (about 10 to 15 minutes) drain and allow to cool. Flake the fish.
Mix the other ingredients together to make a “Thousand Island” sauce and cover the fish.
Serve in individual bowls on top of shredded lettuce or create a “pita” shape with lettuce and fill each individually. Serve and enjoy!
