Renata van Dyk is a chef who wants to see her customers eat healthy. She also wants people to lose weight and still enjoy their food. She prepared cool and refreshing cucumber rolls and they are filled with goodness. 

According to her, it is so easy to prepare everybody can do it. She is the owner of The Noshery, a new deli and tea room at Monica Lane, Monica Avenue in Klerksdorp’s northern suburbs. She is a mom with two little ones and is married to Hugo. 

Ingredients:

• Whole cucumber. Shaved 
• Cream cheese or cottage cheese
• Can of tuna. She prefers the chunky ones

• Red onion chopped. It looks pretty.
• Slices of avo, tomato, gherkins and capers (optional). 
• Mayonnaise. Use the make you like.
• Sriracha sauce if you want your mayo to have a bite.

Method:

Shave cucumber with pealer in long thin slices. Place peals next to each other on a chopping board. 
Spread cream cheese over the slices, while mixing tuna, mayo and gherkins in a bowl. Spread the tuna mix on top. 
Cut tomato into half-moons and arrange in front of tuna mix. Add sliced avo and do the same. 
Roll like a swiss roll. Cut into pieces and enjoy. 
It’s cool, filling and healthy.
