Many South Africans have family recipes that have been passed down for generations – Ouma’s melktert, aunty Dot’s chocolate chip cookies, Gogo’s samp - but in the Wittstock family the  favourite is pecan nut tart. Delena Wittstock (affectionately known as Nana by her grandchildren), recently celebrated her 85th birthday, but nothing seems to compare to her pecan nut tart when it comes to family gatherings and requests for dessert. This particular tart can keep for a couple of days in the fridge – but that hardly ever happens, once it’s ready to serve, it’s usually dished up and gone in minutes (second helpings included). It’s quick and easy to prepare and just as quick and easy to eat. Rustenburg Herald suggests making at least two at a time, the first one won’t be enough to satisfy the family’s cravings for all things sweet! Enjoy this scrumptious, delicious, delectable and mouthwatering tart – it will be worth it!

Ingredients:

3 Egg whites
1 Cup sugar (brown or white)
12 Cream Crackers – crushed into pieces
50g Pecan nuts – crushed into pieces
1 Teaspoon baking powder
1 Teaspoon Vanilla Essence
1 Tin Caramel condensed milk
250g Fresh cream

Method:

Separate eggs and beat egg whites until stiff, adding sugar slowly.
Fold in Cream Crackers, pecan nuts, baking powder and Vanilla Essence.
Take mixture and press into a greased pan and place in the oven at 140⁰C for 30 minutes or until set.
Cool, cover with caramel and then whip cream (until stiff and fluffy) to place on top.
Garnish with crushed nuts.
